What is an Alcoholic Beverage?

I

t is liquid product that is suitable for human consumption and contains certain degree of alcohol, that can be either added or produced via fermentation. Medicines containing alcohol are not included amongst alcoholic beverages.

Origin of alcohol: alcohol is produced through the fermentation of certain kind of materials containing sugar, especially fruits and many kinds of vegetables. After fermentation, alcohol is extracted and concentrated throughout distillation.

There are fermented alcoholic beverages such as wine and beer, as well as distilled alcoholic beverages including amongst others Rum, Whisky, Tequila, Guaro and many others.

Fermentation

T

he word fermentation come from the formation of bubbles when gas comes out from a liquid. It was Luis Pasteur who first studied how fermentation was a result of microscopic living beings acting on the fermentable sugars. The result of the transformation of fermentable sugars into alcohol and CO2 is known as alcoholic fermentation.

The living beings responsible for the fermentation process are known as yeast, and yeast is present in many different forms in the nature. In the grapes for example, yeasts are located in the external part of the fruit and that’s why the grapes must be pressed to make the yeast make contact with the fermentable sugars.

The fermentation processes usually produce liquids which are not high in terms of alcohol content. Wines for example tend to be around 12 degrees. For the alcohol to concentrate it is needed to run a distillation process.

History of Distillation

S

ince ancient times the humankind has been aware of the exiting qualities of the fermented beverages, wine and beer for example that have been always very relevant in different cultures. However, in this ancient civilization it was not clear what alcohol was, and they did not know the art of distillation. It was the Greek people who first distillated but water, but not alcohol.

Centuries after that it was in Arabia that the first alchemists who first used the distillation process to extract flavors and aromas form different sources. They were also the first one introducing the concept of the Alembic.

In the XII Century in the Mappa writings, it came out for the first time the concept of “Aqua Ardens” (Water in fire). 1oo years later Arnaldo de Vilanova professor at the Montpellier University and Ramon Llull his protégé were the first ones formally describing the complete process of the alcohol production. In 1700 J.B. Porta who was a Napolitan chemistry professor and, in his work, named “De Destillatione” describes all the details of the wine distillation and how to build up a distillation apparatus.
